Critical PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters.

Critical Repeat Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed raw ground turkey stored above ready to eat foods in cooler.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Quaternary ammonium sanitizing solution at incorrect concentration in 3-bay sink. Quat sanitizer tested below 150 ppm in 3-bay sink. Observed employee adding soap to sanitizer bay and then rinsing off sanitizer. All dishes must be washed-rinsed-sanitized and then left to air dry. Sanitzier tablets must be between 200-400 ppm.
