Critical Corrected During Inspection PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Observed floor basket used to store floor are not being properly sanitized at time of inspection. Corrective Action: All equipment shall be clean to sight and tough.

Critical Repeat Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed raw shelled eggs stored on above milk at time of inspection. Corrective Action: PIC places eggs at the bottom of the shelf.

Critical Equipment food-contact surfaces or utensils are unclean. Observed Blue Bunny ice cream cooler with build-up on the rims of the coolers at time of inspection. Corrective Action: Equipment shall be cleaned to sight and touch.

Food improperly slacked. Observed ice cream blue bonnet ice chest cooler being left open and unplug to thaw out chicken at time of inspection. Corrective Action: Thaw under refrigeration or cold running water.

Repeat Improper storage of food items. Observed single use items (foam cups, to go containers, plates & napkins) sitting on the floor at time of inspection. Corrective Action: All single use items shall be store 6 inches off the floor.
