Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed raw eggs being stored above TSC food items. PIC moved eggs during inspection.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Equipment food-contact surfaces or utensils are unclean. Observed buildup on ther meat slicer and in the ice machine. PIC will ensure these areas are cleaned..

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed cut deli meat without date marking in the front display case.

3717-1-06.4(K) / Controlling pests.
Critical Presence of insects, rodents, and other pests. Observed extensive harborage areas throughout backrooms of facility and in the basement. PIC needs to ensure that pest control company is checking entire building and reporting results to the PIC.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Corrected During Inspection No towels or drying device at the handwashing sink(s). Observed no paper towels at the hand sink behind front counter. PIC replaced during inspection.

3717-1-06.1(M) / Outer openings - protected.
Outer opening not protected. Observed light coming throught openings at the bottom of doors leading outside back room and between the backroom and kitchern.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Improper storage of food items. Observed open tomatoe sauce cans under prep line that were not protected from contamination from racks above.

3717-1-03.2(I)(1) / Storage or display of food in contact with water or ice - packaged foods
Packaged foods improperly stored or displayed in direct contact with ice and/or water. Observed reach in ice cream freezer at front door with frozen products directly touching ice buildup.

3717-1-03.2(M) / Wiping cloths - use limitation.
Corrected During Inspection Improper use and/or maintenance of wiping cloths. Observed dirty wiping clothes on the prep table. PIC removed the clothes during the inspection.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed broken flooring and areas at the bottom of walls in the kitchen.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed buildup around the fan in the kitchen.
