3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Repeat Food contact surfaces not easily cleanable. Observed the roller on the dough sheeter with grooves worn into the surface. The roller must be replaced as it is no longer smooth and easily cleanable. Corrective Action: Replace the roller on the dough sheeter as it is no longer smooth and easily cleanable.

3717-1-04.4(B) / Cutting surfaces.
Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed the surface of the butcher block table used to cut and box food items to no longer be smooth and easily cleanable. The table has a large knot hole in it, worn concave areas, nicks, and deep score marks. Due to the depth of the knot hole the table will have to be replaced. Replace the butcher block table.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed the hood over the pizza oven with a build-up of grease and dust. Have the hood over the pizza oven cleaned. Sticker indicates that the hood was last cleaned on 1/9/2023, so the hood is past due for cleaning.

Met with Andrea during the inspection.

Observed sheet pans in the walk-in cooler of cooked chicken wings. The wings had been cooling for 2.5 hours and were at an internal temperature of 43 degrees. Great job!!
