3717-1-03.2(J) / Food contact with equipment and utensils
Critical Observed food in contact with an unclean surface or linens.Observed build up inside ice machine chute by the kitchen area at time of inspection.
To prevent contamination, food shall only contact the surfaces of cleaned and sanitized equipment and utensils, linens or single-use and/or single-service articles.
3717-1-04.5(B) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Food equipment surfaces are not cleaned at the required frequency.Observed build of dirt and debris inside pop nozzles by the main floor area during inspection.
Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified in this rule.

3717-1-04.1(G) / Can openers - cleanability
Cutting or piercing parts of can openers are not removable for cleaning and for replacement.Observed build up of food debris on can opener blade during inspection.
To prevent food borne illness, cutting or piercing parts of can openers shall be removable for cleaning and replacement.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris inside handwashing sink by the kitchen area at time of inspection.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

Observed a probing thermometer, gloves and hair restraints at time of inspection.
Observed Quaternary Ammonium sanitizer in three compartment sink and buckets at 200ppm during inspection.Test kits available.
Observed chlorine dish machine at 50ppm on a final rinse at time of inspection, test strips for chlorine.
