[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed chicken in the fajita make table holding at 46 degrees in some spots, and 39 degrees in others. PIC stated chicken from the lunch service was combined with a fresh pan, thus the different temperatures. PIC placed the pan in the walk in cooler until it cooled to below 41 degrees before placing it back in the fajita make table.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed cooked rice in the walk in cooler without date marking. PIC date marked the rice.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Food not protected from contamination. Observed food in the walk in freezer with ice build up on it. Water was coming from the condenser unit when the door was open and freezing on food stored underneath. Contain the condensation and/or remove food from beneath the condenser so it is not dripped on. Examine food to see if it has been contaminated, and discard if so.
