3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Corrected During Inspection TCS foods were not being held at the proper temperature. Observed chicken nuggets holding at 113F on a kitchen counter at time of inspection. Hot food items must be held at 135F or above to prevent bacteria growth. Nuggets were reheated in the oven. Nuggets were 194F after reheating.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above.
3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food that had been date marked was not properly discarded when required. Observed lunch meat held past date marked (10/11) in the cooler.
To prevent illness, refrigerated, ready-to-eat TCS food that has been date marked in the facility shall be discarded if it: (a) exceeds the temperature or time specified in (G)(1) of this rule, except the time the food is frozen; (b) is in a container or package that does not bear a date or day; or (c) is marked with a date or day that exceeds the time and temperature combination specified in (G)(1) of this rule.

*Tested chlorine sanitizer between 50-100 ppm in spray bottle and three bay sink.

*Observed signed employee reporting agreement form.
*Facility has a written procedure for cleaning up vomit/fecal accidents.
*Temperatures: mashed potatoes 154F, milk 39F, cheese 39F, nuggets 113F.

NOTES:
*Observed soap and towels for handwashing at the utensil washing sink. A sink used for utensil washing may not be provided with handwashing aids and devices required for a handwashing sink. Move soap and paper towel dispenser closer to the hand sink.
