3717-1-02.1(C) / Employee Health: Person in charge resposibilities regarding conditional employees
Critical Corrected During Inspection Conditional employee not properly excluded or restricted. Observed no employee health policy at time of inspection. Copy provided for PIC at time of inspection.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed a large container of cooked pot roast sitting out at 46 degrees while being portioned out. Employee was the lone coo on the line and was tasked with too many things to do and the roast was out of temp as a result. Work smaller batches, or assign tasks to employees with less time sensitive tasks to complete. PIC placed the roast beef into the walk in cooler. In future inspections, food items out of temp may be discarded for public safety.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Corrected During Inspection Food not protected from contamination. Observed uncovered turkey breast in the walk in cooler. Observed uncovered chicken strips and cini-biscuits in the walk in freezer. Cover all stored food items to prevent accidental contamination. PIC covered all items in question.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Non-durable equipment observed. Observed the warewashing machine blinking with an unknown issue. The warewashing machine is key to proper cleaning and sanitation of dishes, cookware, and utensils, and the prevention of foodborne illness. Repair the warewashing machine so it functions properly with no issues.

3717-1-04.5(A)(2) / Cleanliness of food-contact surfaces of cooking equipment and pans.
Corrected During Inspection Cooking equipment or pan surfaces unclean. Observed food debris build-up inside bins holding clean lids. Observed excessive build-up on the ceiling of the microwaves. PIC removed the ceilings and cleaned them immediately. Add the bins to the cleaning rotation to prevent build-up of food debris and contaminating clean lids.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed cleaning needed under and behind the ice machine and warewashing machine. Ensure hard to reach areas are not neglected during routine cleaning.
