[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Repeat Corrected During Inspection TCS foods not being cold held at the proper temperature. The cold well in the buffet area was not turned on at time of inspection. The cut watermelon stored in it was 77F and the yogurt was 69F. All TCS food shall be held at 41F or less to prevent the growth of bacteria. Discard the TCS foods.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed several TCS foods including but not limited to ham, cut tomatoes and cheese out at room temperature for the production of salads and sandwiches. The ham was 75F, cut tomatoes were 77F and cheese was 68F. All TCS foods shall be held at 41F or less to prevent the growth of bacteria. The TCS foods were discarded.

Critical TCS foods not being cold held at the proper temperature. The walk-in cooler was holding piccata sauce at 42F and gravy at 44F. All TCS food shall be held at 41F or less to prevent the growth of bacteria.

3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Inadequate equipment available for cooling, heating or holding food. Found a large quantity of TCS food out at room temperature for the production of salads and sandwiches. The foods were 68F-77F at time of inspection. There is insufficient cold holding for the production of salads and sandwiches in the facility. Provide sufficient refrigeration to hold the food cold during production or remove these items from the menu.

3717-1-02.3(C) / Hair restraints - effectiveness.
Observed a food handler without a hat or beard restraint at time of inspection. All facial and head hair shall be covered and effectively restrained.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Non-durable equipment observed. Observed plastic lids for the hot holding that have cracked and are no longer in good repair. Replace the broken lids.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. The walk-in freezer was not operating as it should and the walk-in cooler was not holding TCS food at 41F or less. Contact a licensed repair service to fix both the freezer and cooler.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed build up inside the hood and on its filters.

3717-1-06.3 (C)(1) / Employee accommodations - designated areas
Observed an employee backpack and beverage stored on a food contact storage and prep surface. Store all personal belongings in a designated space that is away from food and food contact surfaces.
