3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Ready-to-eat, TCS food not properly discarded when required. Observed opened packages of sausages in the walk in cooler dated 11/21, which is beyond the maximum 7 days allowed to hold these items. Refrigerated, ready to eat, TCS foods may only be held up to 7 days once the manufacturer's packaging is opened. Sausages were discarded at time of inspection.

3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. The chest freezer in use for food storage is for home use only. All equipment used in a licensed food facility must be commercial grade and NSF approved or equivalent.
