3717-1-03.4(F)(2) / Time/temperature controlled for safety food - cold holding of eggs
Critical Repeat Corrected During Inspection Observed eggs & egg beat stored at 46-50F. TCS egg food items shall be stored at 45F or lower.
To prevent the growth of pathogens, eggs that have not been treated to destroy all viable Salmonellae shall be stored refrigerated at an ambient air temperature of 45° F or less.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed leak on floor from the sink with running water to store utensils. Contact a licensed repairman.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-04.5(A)(2) / Cleanliness of food-contact surfaces of cooking equipment and pans.
Cooking equipment or pan surfaces are dirty. Observed lids on cookline that had food build up on them. Change lids when cambros are changed.
To prevent contamination, the food-contact surfaces of cooking equipment and pans shall be kept clean.
