3717-1-02.2 (D) / Hands and arms: where to wash
Critical Corrected During Inspection Food employee(s) not washing hands in approved handwashing sink or automatic handwashing facility. Observed employee using the three compartment sink to wash her hands. Reminded employee about where to wash hands and she moved to the handwashing sink to wash her hands.

3717-1-04.6(B) / Sanitizing frequency of utensils and food-contact surfaces - before use and after cleaning
Critical Utensils and food-contact surfaces of equipment not sanitized at the required frequency. Observed black build up on the slide of the ice machine. PIC stated it would be cleaned at first opportunity. Increase the cleaning frequency of the ice machine to prevent build up of mold and grime.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed the top of the prep table holding foods, tomatoes, mayonnaise, cheese, etc... at 51 degrees. Observed food in the bottom of the prep holding at 49 degrees. PIC discarded all TCS food items in the top and bottom of the cooler. PIC stated the prep table would be replaced and not used until was repaired/replaced.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed cut watermelon being sold without date marking. Cut melons are a time/temperature controlled for safety food item and require date marking as well as temperature control.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Repeat No towels or drying device at the handwashing sink(s). Observed no paper towels at the three compartment handwashing sink.

3717-1-06.2(B) / Handwashing cleanser - availability.
No soap at handwashing sink(s). Observed no soap at the three compartment sink handwashing sink.

3717-1-04.1(Y) / Temperature measuring devices.
Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Observed multiple coolers without thermometers. Purchase thermometers so cooler temperatures can be monitored and maintained.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Non-durable equipment observed. Observed the prep table cooler holding food between 49 and 51 degrees. Discontinue use of the prep cooler to hold food until it is repaired/replaced. PIC stated he had a spared table to replace it with. Observed a cracked glass window in the deli counter. Tape was used to repair it, which is not sanitary due to an inability to clean/sanitize the surface properly. Replace the window.

3717-1-05.4(D) / Receptacles.
Improper receptacles for refuse, recyclables, or returnables. Observed cardboard boxes being used as trash receptacles. Discontinue this practice as they are not durable, cleanable, nonabsorbent, leakproof, or rodent/insect resistant. Replace the cardboard boxes with proper receptacles with the required characteristics. (A) Receptacles. Receptacles and waste handling units for refuse, recyclables, or returnables and for use with materials containing food residue shall be durable, cleanable, insect-resistant and rodent-resistant, leakproof, and nonabsorbent. This paragraph does not prohibit the use of plastic and wet strength paper bags that may be used to line receptacles for storage inside the food service operation or retail food establishment, or within closed outside receptacles.

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. Observed the floor under the fryers in need of repair. Observed the wall by the deli counter in need of repair. Observed ceiling tiles needing replaced due to being stained, broken, or acoustic tile over the food service area.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Repeat Unnecessary or nonfunctional items and /or litter on premises. Observed excessive clutter in the facility. Progress has been made, and hopefully it continues until the facility has little/no unnecessary/nonfunctional items on the premises.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed the entire facility in need of a deep, detailed cleaning.

Discussed covid, complaints, newspaper/cardboard box use, cleaning the ice cream reach in cooler, and motor oil storage.

During the inspection, a water line to the deli handwashing sink broke. Water was shut off to two handwashing sinks to contain the leak. Repairs were made by an employee and water was restored to both sinks.
