Critical Equipment food-contact surfaces or utensils are unclean. Observed black build-up inside the ice machine. Corrective action: Cease use of the ice machine until it is cleaned and sanitized. Equipment food contact surfaces shall be clean to sight and touch. Discard ice and thoroughly clean and sanitize the inside of the ice machine.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Equipment components are not intact, tight or properly adjusted. Observed a torn gasket on the four door cooler. Repair or replace the gasket.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
No sanitizer test kit available. Observed no sanitizer test strips. Get test strips for this kitchen to ensure sanitizer is at the correct concentration.

3717-1-04.2(H)(2) / Temperature measuring devices - mechanical warewashing.
Irreversible registering temperature indicator not readily accessible for hot water mechanical warewashing operations. Observed no test strips for the high temperature dish machine. Get test strips for the dish machine in this kitchen so the dish machine rinse temperature can be tested each day.

Non-food contact surfaces of equipment are unclean. Observed build-up on the doors of the dish machine. Remove the build-up.

Cooking equipment or pan surfaces unclean. Observed sticker residue on food storage containers. Remove all stickers and sticker residue from containers and cooking equipment before washing as sticker residue can harbor bacteria.
