[?] A summary of the violations found during the inspection are listed below.

3717-1-04.5(B)(3) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Equipment and utensils contacting TCS food not cleaned every four hours. PIC stated the Colada machine was cleaned at the end of the shift. Milk is utilized when making drinks, hence needing to be cleaned at least every four hours. Employee stated it was cleaned more often than that, but could not specify a time frame.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
No towels or drying device at the handwashing sink(s). Observed no paper towels in the front handwashing sink. Ensure paper towels are in all paper towel dispensers to promote handwashing.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Food not protected from contamination. Observed cooked egg patties on a pan without a cover to protect them from accidental contamination. PIC stated the policy was to cover them with a sheet to protect them from accidental contamination.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Facility not maintained clean. Observed cleaning needed close to the wall under the three compartment sink and under the racks in the backroom dry goods storage.
