[?] A summary of the violations found during the inspection are listed below.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Equipment food-contact surfaces or utensils are unclean. Observed that the top of the grill and the fryers need to be cleaned. Correction: Food contact surfaces shall be clean to sight and touch.

3717-1-04.6(B) / Sanitizing frequency of utensils and food-contact surfaces - before use and after cleaning
Critical Corrected During Inspection Utensils and food-contact surfaces of equipment not sanitized at the required frequency. Observed that there was not a sanitizer bucket in the facility during the inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed fried chicken, spaghetti, salads ect, food in the display case that did not show a date of when it was prepared, needed to be sold, or discarded. Correction: RTE/TCS foods held for more than 24 hours in an FSO/RFE shall be clearly marked to indicate consumption, sell by, or discard date.

3717-1-02.4(A)(2) / PIC - Manager Certification
Facility does not have an employee with manager certification in food protection.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Non-durable equipment observed. Observed a cooler and a freezer that were not operating properly during the inspection: The freezer was at 30(F) during the inspection and the cooler temp was at 52(F) during the inspection.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean.Observed that the outside of the microwave, the outside of the two door reach in cooler, and the inside of the cooler and its shelving needs to be cleaned. Observed that the hoods needs to be cleaned in the facility as well.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Unnecessary or nonfunctional items and /or litter on premises. Observed unnecessary items that need to be removed from the kitchen. Also observed a hallway full of food and items that you can barely walk down. Organize and get rid of unnecessary items.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed that the kitchen area was not maintained clean. The floors, walls, and ceilings need to be cleaned.Build up and debris from oil, splash, and spillage were observed. Observed that underneath and inbewtween all equipment need to be cleaned.
