[?] A summary of the violations found during the inspection are listed below.

3717-1-04.6(B) / Sanitizing frequency of utensils and food-contact surfaces - before use and after cleaning
Critical Utensils and food-contact surfaces of equipment not sanitized at the required frequency. Observed that there was not a sanitizer bucket or sanitizer i the kitchen during the inspection. Correction: Utensils and food contact surfaces shall be cleaned before and after cleaning.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Repeat Equipment food-contact surfaces or utensils are unclean. Observed that there was build up inside of the ice machine that will need to be cleaned. Correction: Food contact surfaces shall be clean to sight and touch.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed that there was ham, sausage, and other foods in a cooler that were not date-marked. Correction: TCS/RTE foods shall be datemarked the day they are prepared, consumed, or need to be discarded. Discussion took place with manager.

3717-1-04.2(H)(2) / Temperature measuring devices - mechanical warewashing.
Irreversible registering temperature indicator not readily accessible for hot water mechanical warewashing operations. Observed that the facility dies not have a registering temperature device for the dish machine.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Non-food contact surfaces of equipment are unclean.Observed build-up on the sides of the equipment where the grill is. Lots of debris on the unit under the grill on the cook line. Observed that all of the cold units need to be cleaned on the inside from debris. Observed that the outside of all equipment needs to be wiped down due to build-up.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. Observed that the dish machine was not working during the inspection and will need to be fixed.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Facility not maintained clean. Observed that the floors and walls need to be cleaned throughout the facility. Observed that the walls by the dish machine need to be cleaned, and near the flooring near the dish machine. Observed that the wall behind the grill line needs to be cleaned on both sides.
