3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed egg rolls and wantons in the walk in cooler without date marking. Observed items in the bottom of the prep top cooler, egg rolls, almond chicken, and wantons, without date marking. PIC date marked all food in question.

3717-1-02.4(A)(2) / PIC - Manager Certification
Repeat Facility does not have an employee with manager certification in food protection. Hand out emailed to PIC.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Corrected During Inspection Food not protected from contamination. Observed food uncovered in the walk in cooler. PIC covered the cut onions, wantons, and egg rolls to protection them from potential contamination.

3717-1-03.2(K) / In-use utensils - between-use storage.
Corrected During Inspection In-use utensils improperly stored. Observed a knife stored between the a prep table and the prep top cooler. PIC moved the knife so it could be properly cleaned.
