[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical TCS foods not being cold held at the proper temperature. Ranch dressing is 51F in a squeeze bottle in the top of the prep top cooler. TCS foods must be held cold at 41F or lower at all times. PIC stated that they have ordered an insert for holding squeeze bottles in the prep top in better contact with the cold air.

3717-1-02.4(A)(2) / PIC - Manager Certification
Facility does not have an employee with manager certification in food protection.

3717-1-03.2(M) / Wiping cloths - use limitation.
Observed wet wiping cloths not completely submerged in sanitizer in the wipe cloth bucket. Store wet wiping cloths submerged in sanitizer solution to prevent the growth of pathogens.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Observed the interior lid of the pizza prep top cooler is coming apart, exposing styrofoam insulation. Properly enclose/seal the lid so that it is intact, smooth, and easily cleanable. Observed an undercounter cooler that is broken and not in use. PIC stated that this cooler will either be repaired or replaced.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed liquid in the bottom of the glass cooler at the bar. Observed ice build up on the interior of the walk in freezer.

Dish machine is dispensing chlorine sanitizer properly at 100ppm, test strips available, EcoLab is present at inspection and is installing an alarm for the sanitizer.
Quat sanitizer buckets are set up correctly at 200ppm
