Food stored in prohibited area. Observed the prep top cooler is located in the garage room behind the kitchen. Food may not be stored in the garage. Store all food in the kitchen which has finished floors, walls, and ceilings for food storage.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed bananas stored in a reused cardboard box. Food must be stored in a non-absorebent, smooth, and easily cleanable food grade container.

3717-1-06.4(F) / Drying mops.
Mops dried improperly. Provide hooks for hanging mops to allow them to properly air dry.

3701-21-25(K) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection.
