3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed a box of butter being stored directly on the floor in the walk-in cooler.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-04.1(A) / Equipment and utensils - durability and strength.
Observed disposable cups being used as scoops in the espresso beans and sprinkles. Use a commerical food grade scoop with a handle to portion food.
Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.
3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed a cracked handle on the ice scoop container. Remove damaged items from use to prevent physical contamination and allow for proper cleaning.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Observed clean coffee pots being stored directly under the paper towel dispenser at the hand-sink which could lead to splash/drip contamination. Do not store items here.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Observed plastic forks being stored facing both ways - to prevent contamination to the mouth end of the fork, store utensils with the handle facing up.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.
3717-1-05(I) / Pressure.
Repeat Water under pressure is not available to all fixtures and equipment that are required to use water. The hot water on the hand-sink does not allow enough flow to wash hands properly. Make immediate repairs.
To ensure proper cleaning and sanitation, water under pressure shall be provided to all fixtures, equipment, and nonfood equipment that are required to use water.
3717-1-06.4(F) / Drying mops.
Observed mops being dried using an unapproved method. Use the avaiable hooks to hang mops to properly dry - not against the wall.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
