[?] A summary of the violations found during the inspection are listed below.

3717-1-05.1(O)(1) / Using a handwashing sink - accessible at all times
Critical Handwashing sink not accessible. Observed that due to the thawing and food preparation going on in the mobile that the handwasing sink was completely blocked from use. Corrective Action: The handwashing sink must be fully accessible at all times to allow for proper handwashing. Thawing was being done illegally and was stopped during the inspection. This allowed the handwashing sink to be accessible again. Handwashing sinks cannot be used for any purpose other than handwashing. Make sure that the handwashing sink is freely accessible at all times for handwashing.

3717-1-04.6(B) / Sanitizing frequency of utensils and food-contact surfaces - before use and after cleaning
Critical Utensils and food-contact surfaces of equipment not sanitized at the required frequency. Observed that the mobile was preparing foods and sanitizer buckets were not set up or available. Corrective Action: Set up the sanitizer buckets prior to starting any food preparation. Have the buckets set up and ready, sanitize the food prep areas prior to starting food prep as the truck/trailer have been traveling and the surfaces could be contaminated.

3717-1-03.4(C) / Thawing - temperature and time control.
TCS foods not properly thawed. Observed the mobile thawing in standing water, in bags just sitting in the three compartment sink, and at room temperature. The mobile does not have a food prep sink and thus the only way that thawing can be done on this mobile is: under refrigeration ahead of time or as part of the cooking process. Thawing cannot take place in the standing water of at room temperature. Inspector went over thawing in detail with the mobile owner. All frozen foods were placed back under mechanical refrigeration at the time of the inspection. Foods must be thawed correctly to prevent the growth of pathogens.

3717-1-04.8(E)(1) / Single-service and single-use articles - storage
Observed single service items stored on the floor of the mobile. Store all single service items up off the floor to prevent contamination. Provide additional shelving under the counter for proper storage.

3717-1-04.2(B)(2) / Manual warewashing - sink compartment size requirements.
Sink compartments too small to accommodate the largest piece of equipment. Observed the mobile using bus tubs and large bowls that will not fit in their three compartment sink at least 50%. All equipment, dishware, utensils, and food contact containers must fit at least 50% in the bays of the three compartment sink. Remove all of the added items that do not fit in the sink correctly or at least 50%. All items must be able to be properly washed, rinsed, and sanitized in the three compartment sink. The items must have the required contact time with the sanitizer.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. Observed flooring damaged by the back door. Flooring must be maintained in good repair and be smooth and easily cleanable.

3701-21-02(H) / FSO must display icense; Display of Mobile FSO information
FSO license not displayed; improper display of mobile FSO information. Observed the name, city, and phone number with area code stickers peeling off the one side of the mobile. Replace the stickers. All of the letters and numbers must be at least 3" tall. Owner stated she was working on replacing them.

3701-21-03 / Facility layout and equipment specifications for FSO
FSO did not submit facility layout and equipment specifications. Observed that the mobile added additional fryers that are not on their drawing. Remove the fryers, contact your inspector, and discuss adding them with your inspector. The mobile, the menu, or the equipment cannot be changed or altered without the prior approval of the health department. Contact your inspector right away about the fryers as they were not approved.

Met with Cynthia during the inspection.

Mobile was having electrical issues with their generator. Repair service came to location to make on the spot repairs to get them through the event. Make sure to have the generator and/or the electrical on the mobile completely repaired so that the issue does not occur again.

Discuss the addition of the fryers with your inspector. Until your inspector has approved the additional fryers, they cannot be on the mobile.

All handouts were left at the time of the inspection. Post as is required.
