3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed pans of cut lettuce and salsa without date marking. PIC put date marks on all items in question.

3717-1-05.1(D) / Backflow prevention - air gap.
Critical Insufficient air gap between the flood rim and the water supply inlet. Observed air gap needed at the prep sink and ice machine.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Repeat Food not protected from contamination. Observed ice build-up on a sealed bag f meat in the walk in freezer. Protect food from accidental contamination from the ice by moving it to a location where it will not be dripped on, containing the drip, or repairing the line so it does not drip.
