Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed hot dogs date marked 12/6-12/13 which would be 8 days. Use a calendr if needed. Only a few hotdogs remained, they were discarded.

3717-1-03.4(E) / Cooling methods - temperature and time control.
Corrected During Inspection Improper method for cooling TCS foods. Observed breakfast sausage cooling in the walk-in cooler inside an enclosed container. Vent lid to allow for hot air to escape while cooling down hot foods.
