[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed ham, in the pizza make table, holding at 46 degrees. The ham was stacked above the fill line. PIC removed the ham that was above the fill line and placed it in the walk in cooler. The ham was re-temped and registered a temperature of 40 degrees.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles not protected from contamination. Observed an open box of Cini lids with staining and food debris on it. It was stored on the bottom shelf next to the trash can by the handwashing sink. The food debris is a result of splash from when things are thrown away. PIC removed the debris and sealed the box. PIC stated an alternative storage location would be found.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed excessive grease build-up in the front of the pizza oven hood. Increase the cleaning frequency of the hood to prevent grease build-up as it is a fire hazard. Observed the fan guards in the walk in cooler in need of dusting.
