Critical PIC unable to demonstrate knowledge of cleaning and sanitizing. Observed person in change did not demonstrate proper cleaning and sanitizing before use and after use. Corrective Action: PIC shall demonstrate knowledge on proper procedures for setting-up sanitizer bucket for cleaning.

3717-1-02.2 (D) / Hands and arms: where to wash
Critical Food employee(s) not washing hands in approved handwashing sink or automatic handwashing facility. Observed employee handwashing at the 3-compartment sink. Corrective Action: Handwashing shall only be done at the handwashing sink.

3717-1-04.6(B) / Sanitizing frequency of utensils and food-contact surfaces - before use and after cleaning
Critical Utensils and food-contact surfaces of equipment not sanitized at the required frequency. Observed no sanitizer bucket set-up. Corrective Action: To prevent pathogen growth, utensils and food-contact surfaces of equipment shall be sanitized before use and after cleaning.

Utensils, thermometers, and/or pressure gauges not in good repair or calibrated. Observed hot holding unit outside thermometer reading 140(F) and did not match the internal thermometer temperature of 127(F).
