3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Repeat Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed raw chicken stored above raw beef in the walk in cooler. PIC corrected and proper storage order was discussed. Observed spring rolls and won tons uncovered, on pans, in the walk in cooler. PIC covered all food items in question.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed shrimp without date marking in the walk in cooler. If the temperature controlled food is held for more than 24 hours, such as won tons and spring rolls, marking is required. Food without date marking may be subject to discard in future inspections. PIC date marked the shrimp.

3717-1-02.4(A)(2) / PIC - Manager Certification
Repeat Facility does not have an employee with manager certification in food protection. Working with PIC to find the course in Mandarin.

3717-1-02.4(C)(17) / PIC: duties - ensure the facility has written procedures for responding to vomiting and diarrheal events.
Corrected During Inspection No written procedures for responding to vomiting or diarrheal events. A handout in Mandarin will be provided.

3717-1-04.4(S)(1) / Single-service articles and single-use articles - use limitation.
Corrected During Inspection Re-use of single-service or single-use articles. Observed a single use bowl being used to scoop rice into to-go containers. Discontinue use the bowl as it is designed for single use and there is no handle to prevent accidentally contamination rice being scooped out. Observed a single use plastic container with a hole punched in the lid being used to pour a butter substitute. Discontinue these uses.
