3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces are not designed and constructed to allow easy cleaning or maintenance. The folding table where food trays are staged is no longer cleanable.
Nonfood-contact surfaces shall be designed and constructed to allow easy cleaning and to facilitate maintenance.
3717-1-04.2(B)(1) / Manual warewashing - three compartment sink required.
Repeat Observed no three-compartment sink for the manual washing, rinsing, and sanitizing of utenils. This facility does not have a three-compartment sink and uses resuable trays for service.
To prevent contamination, a sink with at least three compartments shall be provided for manually washing, rinsing and sanitizing equipment and utensils. This facility was instructed to return to using disposable trays until a 3-compartment sink is installed. The trays are not to be taken to the dish machine in the school next door.
3717-1-06.1(A) / Floors, walls, and ceilings.
Floors, walls, and/or ceilings were not smooth and easily cleanable. Observed acoustic ceiling tiles in back section of the kitchen
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
