3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed cream cheese sitting out temping at above 50 degrees. PIC stated she was prepping jalapeno poppers and placed the cream cheese back in the walk in cooler. Complete each task individually so items are not forgotten or left out to fall out of temperature, increasing the risk of food borne illness.

3717-1-07.1(A) / Poisonous or toxic materials: Storage: separation.
Critical Corrected During Inspection Improper storage of poisonous or toxic materials. Observed a chemical spray bottle stored over sauces in dry storage. PIC moved the spray bottle so it could not contaminate food items if it leaked.

3717-1-05.1(D) / Backflow prevention - air gap.
Critical Insufficient air gap between the flood rim and the water supply inlet. Observed no air gap installed in the prep sink. Install a proper air gap for the prep sink to prevent possible cross contamination.

3717-1-02.4(A)(2) / PIC - Manager Certification
Repeat Facility does not have an employee with manager certification in food protection. Observed no employee with Manager certification in food protection. Provide training so at least one employee has manager certification in this facility.

3717-1-04.2(G)(1) / Food temperature measuring devices - availability
Repeat Food thermometer not readily accessible. Observed no food thermometer in the facility. Purchase a food thermometer to ensure food is properly cooked and food is maintained at the proper temperature.

3701-21-25(I) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection. Observed no evidence of Person In Charge certification in the facility. Train employees so there is one employee with Person In Charge training per shift.
