3717-1-05.3(C) / Sewage and other liquid waste: Backflow prevention.
Critical Observed a direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed.
To prevent health hazards, a direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Install a minimum of a 2 inch air gap on the drain plumbing of the food preparation sinks. If both sides are used for food prep, both sides will need to be air gapped.

3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Equipment is not approved by a recognized testing agency. Observed sterilyte and gladware style containers used for direct food contact/storage.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency. Phase out homestyle food containers and replace with commercial grade containers.
