3717-1-06.4(K) / Controlling pests.
Critical Observed the presence of live insects, rodents, and other pests. Observed droppings, pest control was involved discussed to clean the droppings and keep an eye on the areas.
To prevent illness, the presence of insects, rodents, and other pests shall be controlled by: Routinely inspecting incoming shipments of food and supplies; routinely inspecting the premises for evidence of pests; Using methods, if pests are found, such as trapping devices or pesticides used according section (C), (K) and (L) of rule 3717-1-07.1 of this code; and eliminating harborage conditions.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed improper storage of food items. Observed foam cups stored in the restroom, items in the back storage area on the floor, to-go containers with open packaging on the floor - discussed storing them upside down to prevent contamination and off the floor.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-03.2(Y) / Miscellaneous sources of contamination.
Miscellaneous sources of contamination observed. Observed slight build up on the fan covers in the walk-in cooler, observed build up on the hood and hood filters.
Food shall be protected from contamination that is not specified under 3717-1-03.2 (A) to (X).

Discussed ceiling tiles in the food preparation area must be smooth, non-absorbent and easily cleanable.
Discussed the floor in the food area needs to be repaired as well as the cove base molding.
Discussed a covered trash receptacle is needed in the womens' restroom.
Discussed to use the commercial grade containers when storing food and not re-using containers- observed a potato salad container being re-used.
Discussed 3-compartment sink must be big enough to fit 50% of the largest piece of equipment.
Discussed Level 2 Food Safety Certification will be obtained by March 31, 2018.
