3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Observed raw fish stored above salsa in the two door cooler at time of inspection.
Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.
3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical The two door cooler by the ice machine is holding TCS foods at 45F-47F at time of inspection. The salsa in this cooler is 56F, but was just made today.
TCS food shall be held or at 41°F or less. This cooler is no longer in use until it is repaired and holding properly at 41F or lower.

3717-1-04.6(A) / Food-contact surfaces and utensils - sanitization required
The sanitizer bucket is too weak at time of inspection with quat sanitizer at less than 150ppm..
Change out sanitizer solution as often as needed to maintain multi range quat sanitizer at 150-400ppm.
