[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical TCS foods not being cold held at the proper temperature. Found raw hamburger patties sitting in the food prep sink at 59F. All TCS food shall be held at 41F or less to prevent the growth of bacteria. Discard the out of temperature food.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked. Did not observe date marking on much of the food in the walk-in coolers that required it. Date mark all TCS, ready to eat food held over a 24 hour period to prevent the growth of bacteria.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed splatter in the upstairs hand sink just outside the cafe.

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. The dish machine is severely leaking water. Contact a licensed repair service to eliminate the leak. If the machine cannot be repaired it will have to be replaced.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed debris on the floor under the 3-compartment sink and lots of pooling water in the dish machine room, inside te walk-in cooler and in the dry storage room.

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. Observed holes in the walls and the ceiling is in disrepair in the dish machine room.
