Critical Repeat Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed thawing beef stored above cooked chicken. Employee moved the chicken so it was not below the beef.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed shredded cabbage out at room temperature. PIC moved the cabbage into cold holding. Cut leafy greens must be held below 41 degrees.

3717-1-02.4(A)(2) / PIC - Manager Certification
Repeat Facility does not have an employee with manager certification in food protection. Handout and links provided to PIC.

3717-1-03.4(C) / Thawing - temperature and time control.
Corrected During Inspection TCS foods not properly thawed. Observed raw beef being thawed at room temperature. Employee moved the beef into the walk in cooler to thaw.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Repeat Corrected During Inspection Food not protected from contamination. Observed two pans of cooked chicken uncovered in the reach in freezer. Observed multiple containers of chicken, egg rolls, and wantons uncovered in the walk in cooler. Cover all stored food items that are not in use to prevent accidental contamination. Employee covered all food items in question.

3717-1-03.2(K) / In-use utensils - between-use storage.
Repeat Corrected During Inspection In-use utensils improperly stored. Observed a knife stored between the prep top table and another table. Employee removed the knife and washed/sanitized it.
