3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
The plumbing system was not properly maintained - observed the three bay sink leaking into a bucket. Observed the drain plug levers being propped up with dish racks to properly hold water. Service sink to function properly - make necessary repairs or replacements.
A plumbing system shall be properly maintained.

Griddle being used to cook items such as eggs to order. Oil spray being used - no suppression system available. Will refer to Fire Inspector.
Train all staff on proper use of dish-machine. Use available maximum registering thermometer to verify final rinse temperature before running items through. It is recommended to maintain a log for regular dish machine checks.
