Observed the prep top cooler holding sauces at 54 degrees, with an internal temperature of 54 degrees. PIC's thermometer confirmed the sauces were 54 degrees.

The cooler's internal thermometer indicated a temperature of 40 degrees. Replace the thermometer with an accurate thermometer and repair the prep top cooler so it maintains food below 41 degrees. Until then, the cooler is not approved for use.

Once repaired, contact the TLCHD for a reinspection.
