[?] A summary of the violations found during the inspection are listed below.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Repeat Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Observed the mechanical warewashing sanitizer dispenser dispensing quaternary ammonium sanitizer at a concentration above 500 ppm. The sanitizer should be between 150 and 400 ppm, per facility poster. PIC diluted the sanitizing bucket so it was the proper concentration. Have the dispenser serviced so sanitizer is dispensed at the proper concentration.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed cracked lids for cambros, which are no longer easily cleanable due to the cracks. Discard and replace all cracked or broken lids, containers, and.\/or utensils.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Non-food contact surfaces of equipment are unclean. Observed the drying racks being sticky to the touch. Increase the cleaning frequency of the drying racks so they are maintained clean to sight and touch.

3717-1-05.1(S) / Plumbing system - maintained in good repair.
Plumbing system not properly maintained or repaired. Observed the base of the faucet of the three compartment sink leaking when it is charged with water. Repair the fixture so it no longer leaks when charged with water.

901:3-4-16(C) / Person in Charge Certification in Food Protection
Repeat RFE does not comply with Person in Charge Certification requirements. Observed no proof employee preparing food had Person in Charge training in food protection.
