Equipment components are not intact, tight or properly adjusted. Observed that the gaskets on the reach in cooler door were torn during inspection.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. Observed cracks throughout the tile in the kitchen during inspection.

Lunch Periods: 11:15 PM

1. Consulted with PIC about Level one food safety course
2. Food is catered by the 300 Club. Caterer was present during inspection, food was put directly into the Cambro unit to be hot held. PIC needs to be present while receiving the food so that a temperature can be taken before receiving.
3. Catered food for hot holding was at 137 F.
4. Reach in was holding at 37 F.
5.Consulted with PIC about keeping the food above 135 for hot holding. The plates at the school are pre-made before the kids come in. Proper procedures are being taken to make sure that the TCS food is put out right before each lunch period starts to hold to the proper temperatures.
6. Facility needs to hang there food license.
7. Vomit/fecal written procedures also need to be hung.
8. The school serves 190 kids.
9. Temperature of food before it was served: 136 F.
10. Consulted with PIC about when to wash hands and change gloves.
- After handling soiled equipment or utensils.
- During food preparation, as often as necessary to remove soil and contamination when changing tasks.
- Before Donning gloves to initiate a task.
- After engaging in any other activities that contaminate hands.
11. Hand sink must be properly stocked at all time during operation with: hand soap, paper towels, and a trash bin.
12. Consulted with PIC to hang choking poster.
13. School has a vomit/fecal kit for any accidents, educated PIC on proper vomit/fecal procedures.
14. Consulted with PIC to clean fan in the fridge.
