[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical TCS foods not being cold held at the proper temperature. Observed several opened bottles of drink mixers that are labeled "refrigerate after opening" that are stored at room temperature at the downstairs bar. These must be held cold at 41F or lower at all times once opened. Mixers were discarded at inspection.

3717-1-04.1(K) / Food temperature measuring devices - accuracy.
Critical Food thermometers are not accurate. Both metal stem thermometers in use in the kitchen are reading 0F at room temperature at inspection.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Repeat Improper storage of food items. Observed food stored uncovered in the walk in freezer. Observed pineapple double panned in the prep top cooler with the bottom of the top pan in direct contact with food beneath it.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed paper towels lining areas underneath cutting boards and under the flat top grill. Paper towels are absorbent, not smooth and easily cleanable and cannot be used to line equipment surfaces.

3717-1-04.4(D) / Warewashing equipment - cleaning frequency.
Warewashing equipment and/or components not cleaned at required frequency. Observed excessive build up on the interior of the dish machine in the kitchen.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed build up on the hood filters over the cook line. Observed build up on the fan guards in the walk in cooler.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. Observed damaged flooring in the dry stock room in the basement. Observed hole in the wall/missing tiles next to the grill on the cook line.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Observed build up on the floors underneath equipment at the bar.
