[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed barbecue sauce and hot sauce being held at room temperature when the container states that it must be refrigerated after opening. Corrective Action: Sauces will be held under refrigeration from now on and were moved to the cooler.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Working food containers not properly labeled. Label the container of cinnamon sugar. Provide a washable scoop with a handle in it as well.

3717-1-04.8(E)(1) / Equipment, utensils, linens - storage.
Store clean utensils so they are protected from contamination. Utensils were being stored in with other items. Clean out the utensil bin and store the utensils so handles are all in one direction.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Non-food contact surface(s) not cleaned at the required frequency. Observed a build-up on the light fixture in the walk-in cooler. Thoroughly clean and sanitize the fixture. Replace the bulbs in the fixture so that employees can monitor cleanliness in the cooler.

Non-food contact surfaces of equipment are unclean. Observed a build-up on the dough proofer. Thoroughly clean the dough proofer.

Note: Ceiling tile above the door of the walk-in cooler fell down yesterday, reinstall the ceiling tile.
