Critical No person in charge present in food facility during inspection. Observed that there was not one person in the facility that could direct the traffic of food. Observed that the employees in the kitchen did not have knowledge of food safety.

Observations:

1. Please make sure that mask are being worn while in the kitchen area, one employee did not have a mask on.
2. Observed that there was not a disk thermometer or test strips to test the dish machine, staff stated that they were getting the battery.
3. Observed a cart of food sitting out on the floor when walking to the hand sink, while employees were sitting in the front. The food was still frozen and in temperature once it was checked. Food should be unthawed in a walk in cooler or kept in cold holding until it is ready to be prepared.
