Did a handwashing demonstration. Owner of license requested a 2nd inspection for ODE or OD of Job & Family Services. Let those agencies know that the local health department (TLCHD) only requires one inspection per food year (March 1, 2018 through February 28, 2019) for this license. Otherwise step up to a higher level of risk (NC3S) rather than (NC2S) and this will trigger 2 inspections and cover the cost.

Consulted on Date Marking-shared handout.

Temps are good. Want 41 F or less for refrigerated (transport in correct containers, cut lettuce warming up and went into cold storage at receipt), want 135 F or higher for hot holding (measured 137 F for the vertical cabinet (Sloppy Joe mix).

Consulted on keeping working utensils clean (store clean, not in dirty draws).

Owner of license to set up sneeze guards for the plate service. Current practice is open counter where 30 0 50 plates total are prepared for counter-top pick up.
