Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed raw shell eggs stored above salsa and ready-to-eat Hollandaise sauce. Store all raw poultry and eggs below all ready to eat food. (CCP)

Critical TCS foods not being hot held at the proper temperature. Some of the sausages holding in the steam table were 130F. Maintain all TCS food at 135F and greater. (CCP)

Critical Corrected During Inspection Food contact surfaces not easily cleanable. Observed a cracked food container lid covering yogurt. Replace damaged/cracked food contact surfaces as needed as they cannot be properly cleaned and sanitized once damaged. (CCP)

Corrected During Inspection No towels or drying device at the handwashing sink in the back of the house.

Corrected During Inspection Re-use of single-service or single-use articles. Observed styrofoam coffee cups being reused to catch coffee pot drips.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Equipment components are not intact, tight or properly adjusted. The walk-in cooler door gasket is torn.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. The ice machine ice scoop container is severely cracked.

Corrected During Inspection Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed a severely scored cutting board.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Equipment and/or components not maintained. The walk-in freezer door is severely damaged to where it no longer closes properly and is causing extreme ice/frost accumulation in its interior. The walk-in freezer and its door must be repaired immediately to eliminate the ice/frost accumulation.

Non-food contact surfaces of equipment are unclean. Oberved build up on the exterior of the cookline equipment.

Repeat Non-food contact surfaces of equipment are unclean. Observed extreme build up of ice in the walk-in freezer - it is covering racks, the door frame and entire floor and encroaching on food.

Repeat Facility not maintained clean. Observed build up on the floor under the cookline equipment and in the dishroom. Also observed build up on the walls of the dish room.
