3717-1-02.4(C)(16) / PIC: duties - ensure written procedures and plans are maintained and implemented in the facility.
Critical Corrected During Inspection Written procedures and plans are not maintained and implemented. Observed egg, bacon, and turkey sausage being hot held without utilizing the timers, per Dunkin' policy. PIC discarded the turkey sausage, as no one recalled when it was made, and the egg and bacon were placed on timers. Failure to follow procedure may result in all items in question being discarded.

3717-1-04.1(Y) / Temperature measuring devices.
Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Observed four coolers without thermometers. PIC stated they did checks utilizing a stem thermometer. PIC stated internal thermometers would be purchased for the equipment lacking them.

3717-1-02.3(C) / Hair restraints - effectiveness.
Food employee(s) not wearing a hair restraint. Observed employees working without proper hair coverings/hair restraints per Ohio food code. Food employees shall effectively restrain hair by wearing hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food; clean equipment, utensils, or linens; or unwrapped single-service or single-use articles. This provision does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles.

3717-1-04.8(A) / Equipment and utensils - air-drying required.
Corrected During Inspection Equipment and utensils are not being air dried. Observed lexan pans wet nested. Air dry all items before placing them into storage.

3717-1-05.1(S) / Plumbing system - maintained in good repair.
Plumbing system not properly maintained or repaired. Observed the three compartment sink leaking at the faucet connections. Repair the sink so it no longer leaks.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean.Observed cleaning needed in hard to reach areas by the back walk in cooler, under the dry goods racks, corner areas, and under the three compartment sink. Increase the cleaning frequency of these areas.
