3717-1-02.4(C)(9) / PIC: duties - ensure employees are properly maintaining temperatures of TCS foods during hot and cold storage
Critical PIC did not ensure employees are proplerly maintaining temperatures of TCS foods during hot and cold storage.

3717-1-02.4(B)(1) / PIC: Demonstration of Knowledge - No Critical Violations
Critical PIC unable to demonstrate knowledge by having no critical violations.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Repeat TCS foods not being cold held at the proper temperature. Observed ham holding at 45.5 degrees in the make table. The ham was discarded and a new pan brought out. Observed sausage holding at 43.5 degrees in the make table. PIC stated he would keep and eye on it, and the sausage would be used up soon. Monitor the prep table, particularly with these two items, to ensure it remains in temp. Observed bags of pepperoni ham, bacon, and cheese left on the prep table by the delivery driver who was doing prep. The items remained out while he left to do a delivery. Items cannot be left out in this manner and subjected to time/temperature abuse. Pull items being prepped one at a time and have employees place them back in the walk in cooler prior to take on other tasks. Items left out for abuse in this manner may be subject to discard in future inspection. All items were placed into the walk in cooler.

Repeat Facility does not have an employee with manager certification in food protection. Observed no employee with an ODH manager certification in food protection for the facility.

Repeat Handwashing sink water below 100°F. Observed no hot water available in the women's restroom.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
No towels or drying device at the handwashing sink(s). Observed no paper towels at the front counter handwashing sink.

3717-1-06.2(B) / Handwashing cleanser - availability.
No soap at handwashing sink(s). Observed no soap at the front counter handwashing sink.

3717-1-03.4(C) / Thawing - temperature and time control.
TCS foods not properly thawed. Observed bags of cooked chicken left out at room temperature to thaw. Thawing food at room temperature promotes bacterial growth and can lead to food poisoning. Thaw the chicken under refrigeration or under cool running water.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Non-food contact surfaces of equipment are unclean. Observed the squeeze bottle rack being sticky to the touch. Clean the rack and maintain it clean to sight and touch.
