Critical Equipment food-contact surfaces or utensils are unclean. Observed food debris on the slicer in the Erberts & Gerberts area. Food contact surfaces shall be maintained clean to sight and touch. Corrective Action: Clean the slicer so it is free of food debris.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Repeat Corrected During Inspection TCS foods not being hot held at the proper temperature. Observed breakfast sausage in steam table at pizza station holding at 120F. TCS food for hot holding shall be held at 135F or above. Corrective Action: Employee discarded out of temperature sausage.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Repeat Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed single serving cream cheese and butter on an ice bath near bagels holding at 57F anf 52F. TCS food for cold holding shall be held at 41F or below. Ensure container of cream cheese/butter is fully submerged in the ice to ensure the food is being held cold. Corrective Action: Employee discarded cream cheese and butter.

3717-1-07.1(A) / Poisonous or toxic materials: Storage: separation.
Critical Improper storage of poisonous or toxic materials. Observed laundry detergent stored above chewing gum in storage room 1118. Chemicals shall be stored below or away from food to prevent contamination. Corrective Action: Move laundry detergent so it is below or away from the chewing gum.

Working food containers not properly labeled. Observed containers of seasonings in allergen free prep zone not labeled. Label containers of seasonings with the common name of the contents.

Outer opening not protected. Observed light coming in through the bottom of the back loading dock door. Install a door sweep on the loading dock door to prevent the entry of pests.

Non-durable equipment observed. Observed ice build-up in the Hoshizaki reach-in freezer in the pizza area. Repair the freezer to prevent ice build-up

Non-food contact surfaces of equipment are unclean. Observed dust on the ceiling of the G8 walk-in cooler. Clean the ceiling of the cooler so it is free of dust.
