[?] A summary of the violations found during the inspection are listed below.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed that the coffee nozzle had build-up and debris around it. Correction: Food contact surfaces shall be clean to sight and touch.

3717-1-04.6(B) / Sanitizing frequency of utensils and food-contact surfaces - before use and after cleaning
Critical Utensils and food-contact surfaces of equipment not sanitized at the required frequency. Observed that the facility does not have any sanitizer to properly wash, rinse, and sanitize food contact surfaces and utensils. Correction: (B) Sanitizing frequency of utensils and food-contact surfaces - before use after cleaning. Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning.

3717-1-05.1(G) / Handwashing sinks-Number.
Inadequate number of handwashing sinks. Observed that the hand sink in the facility was replaced by a mop sink. The facility will need a handsink.

3717-1-03.2(M) / Wiping cloths - use limitation.
Improper use and/or maintenance of wiping cloths. Observed that the facility did not have any wiping cloths in the facility to properly clean food contact surfaces.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Equipment components are not intact, tight or properly adjusted. Observed gaskets that need to be replaced throughout the facility.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Repeat Nonfood-contact surfaces not easily cleanable. Observed shelving throughout the facility that is not smooth and easily cleanable. Seal the coffee counter, the shelving in the walk-in cooler, and the shelving in the back stock room.

3717-1-04.2(J) / Cleaning and Sanitizers - Availability
Repeat Cleaning agents and/or sanitizers not available in the FSO or RFE. Observed that the facility did not have cleaner for the coffee machine. Obtain the correct cleaner for the BUNN coffee machine.

3717-1-04.4(H) / Warewashing equipment - clean solutions.
Wash, rinse and sanitize solutions not clean. Observed that the three bay sink was not clean and had drinks in the sinks during the inspection, clean out the sinks. Correction: (H) Warewashing equipment - clean solutions. The wash, rinse, and sanitize solutions shall be maintained clean.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Non-food contact surfaces of equipment are unclean. Observed that the shelving in the back stock room needs to be cleaned. Observed that the guards on the fans needs to be cleaned due to dust.

3717-1-06.4(H) / Cleaning and maintenance of plumbing fixtures.
Plumbing fixtures unclean. Observed that the bathroom needs to be cleaned.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Observed debris on the floor of the walk-in cooler that needs to be cleaned.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Unnecessary or nonfunctional items and /or litter on premises. Observed that the back storage area needs to be organized and decluttered.

901:3-4-16(C) / Person in Charge Certification in Food Protection
RFE does not comply with Person in Charge Certification requirements. The facility will now need food safety protection education since they are a risk level II.

Comments
Sam was available for the inspection. A walk through was done with Sam to go over the violations, at the end of the inspection, and a call was placed to Melissa to discuss the inspection report over the phone.

1. The facilities risk level will be changed to a II with the added capuccino machine.

2. Discussed that the bleach being used, Array Germicidal, does not state that it is for food contact surfaces. Discussed with Sam to get non-scented bleach that directly states that it is for food contact surfaces. Sam is using Purell surface in the meantime.

3. A vomit/fecal form will be sent through email, hang the form in the facility.

4. A discussion and demonstration took place on the parts of the coffee machine that need to be cleaned. The funnel was removed and the operator saw the build-up on the nozzle. Discussed with the operator that the nozzle, and the area around the nozzle needs to be cleaned.

5. Discussed and educated the operator on the frequency of cleaning that is required with the coffee machine.

6. The operator will need to purchase the cleaner used for the brewer before using the machine again. The operator did not have the cleaner for teh brewer at the time of the inspection.

7. Sara B. stated all plumbing has been approved and cleared by building inspectors.

8. The facility will need to replace the hand sink that was removed.

9. A reinspection will be performed to ensure that the facility is setting up the three bay sink properly, testing of the sanitizer, purchase of wiping cloths, and to see improvements have been made with the cleaning.
