3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Scented Wet Wipes were being utilized to sanitize food thermometers. Wet Wipes are not approved for food contact surfaces, and any sanitizer shall be unscented, as the scent leaves behind a chemical residue, thus making the surface not sanitized for food contact. PIC utilized alcohol swaps from the first aid kit to sanitize thermometers.

3717-1-04.1(K) / Food temperature measuring devices - accuracy.
Critical Corrected During Inspection Food thermometers are not accurate. Observed catering company, Extra Virgin, utilizing an IR thermometer to measure the temperature of food being delivered. The thermometer only detects surface temperatures, not internal food temps, which is required. PIC utilized a probe thermometer to check delivered food temperatures.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Repeat No sanitizer test kit available. Observed expired sanitizer test kit in use, expiring in 2017. Purchase new test strips and increase the frequency of their usage.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Non-food contact surface(s) not cleaned at the required frequency. Observed food in the water of the steam wells prior to food trays being placed in the wells. Increase the cleaning frequency of the steam wells so no food or food debris is present prior to turning on the wells.
