3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed bulk food containers inside the deli cooler by the 3-compartment sink with no date marks. Corrective Action: Refrigerated RTE, TCS foods prepared in the facility or opened commercially packaged foods held for more than 24 hours must be marked to indicate the date/day the food shall be consumed on the premises, sold, or discarded, and shall not exceed 7 days. The day of preparation or opening shall be counted as day one.

Repeat Facility does not have an employee with manager certification in food protection. Observed facility did not have an employee with manager certification in food protection.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Repeat No towels or drying device at the handwashing sink(s). Observed no paper towels or drying device at the handwashing sink.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Improper storage of food items. Observed 5 gallon pickle bucket on the floor inside the walk-in cooler.

3717-1-03.2(M) / Wiping cloths - use limitation.
Improper use and/or maintenance of wiping cloths. Observed employee using a wet towel to wipe off the knife and not inside a sanitizer bucket.

901:3-4-16(C) / Person in Charge Certification in Food Protection
RFE does not comply with Person in Charge Certification requirements. Observed facility did not have anyone in Charge with Certification requirements.
