3717-1-04.5(B)(1) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Food equipment surfaces not cleaned at required frequency. PIC stated that the milkshake mixer is rinsed with water and then sanitized between each use and then washed, rinsed, and sanitized only at night The food contact portion of equipment must be washed, rinsed and sanitized at least every 4 hours during continuous use.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed ice build up on the interior of the walk in freezer. Repair any leaks and clean build up. Observed build up on the door gaskets of the reach in under counter cooler.

3717-1-06.1(A) / Floors, walls, and ceilings.
Floors, walls, and/or ceilings not smooth and easily cleanable. Observed accoustic ceiling tiles in some places in the back room. Provide smooth and easily cleanable ceiling tiles.

Notes: New milkshakes on menu. In order to clean the mixer, the hand sink may not be used to fill or dump the clean cup (water or sanitizer). Also, food contact surfaces of the mixer must be washed with soap, rinsed and then sanitized at least every 4 hours.

Observed chicken dumpling soup saved last night in the walk in cooler. This restaurant has a class 3 license, which does not allow for cooling and reheating of food in bulk (more than one serving) for hot holding. Soups may not be saved unless the license is changed to a class 4. Contact this department if you would like to change your license to allow for this practice.
