Observed the quaternary ammonium sanitizing buckets testing at 400+ppm, above the safe sanitizing concentration.
PIC had the buckets remade and discussed techniques for filling the sanitizing buckets.

Critical Repeat Corrected During Inspection TCS foods not being cold held at the proper temperature.
Observed a pan of sausage patties overfilled, with the top items temping at 47 degrees.
Overfilled pans will not hold temperature and the facility cannot overfill the pans and expect product to stay in temp.
PIC pulled the overstocked patties.

Observed a pan of thawing cooked eggs in the walk in cooler that was left uncovered.
PIC placed a sheet of parchment paper over the eggs to protect them from accidental contamination.

Observed the drying racks being sticky, in need of more routine cleaning.

Observed a plastic, mobile ice bin being used. The previous ice bin rusted out.
Replace the plastic bin with a commercial, hard plumbed ice bin.
